Pecan Pie Cake
Ingredients:
- 1 box yellow cake mix
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 cup light corn syrup
- 1 cup firmly packed brown sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups pecans, chopped
Instructions:
- Preheat the oven to 350°F (180°C) and grease a 9x13 inch baking dish.
- In a large mixing bowl, combine the cake mix, melted butter, and 1 egg. Mix well.
- Spread the cake mixture evenly into the prepared baking dish.
- In another mixing bowl, whisk together the remaining 2 eggs, corn syrup, brown sugar, and vanilla extract.
- Stir in the chopped pecans.
- Pour the pecan mixture over the cake mixture.
- Bake for 35-40 minutes, or until the top is golden brown and the center is set.
- Allow the cake to cool completely before serving.
